Japanese Deba kitchen knife (minoroshi hosodeba) by Yusei, featuring a blade of Shirogami No.2 (white steel No.2) and fitted with a water buffalo horn handle.

The blade has been hand-sharpened to maintain a keen cutting edge, worked through Kenjo 320, 1000 and 3000 grits, followed by natural whetstones (Tsushima stone, Mikawa Shiro-Nagura koma, Tenkasumi), small-bevel setting and Otsu Asagi. It cuts well and slices newspaper cleanly.
