A yanagiba sashimi knife (yanagiba) by Sukenari (祐成), forged as honyaki. The blade is made of Shirogami No.1 (white paper steel No.1) and the handle is black water buffalo horn. The blade is thin with a narrow width, giving it the character of a kiritsuke-style fugu-biki knife.
- Maker: Sukenari (祐成)
- Technique: Honyaki
- Material: Shirogami No.1 (white paper steel No.1) blade; black water buffalo horn handle
- Blade length: approx. 255 mm
- Blade thickness: approx. 2.6 mm at the thickest point near the heel
- Overall length: 405 mm
- Weight: 86 g
- Signature / Seal / Box: Maker's mark hand-carved with a chisel rather than stamped
- Condition: No noticeable scratches or stains. An older knife that has had rust and scratches restored; after mirror-polishing, fine scratch marks remain on the cutting bevel and the reverse side. Finished on a Kitayama 8000, a Shapton 12000, and a natural whetstone, and in very sharp, ready-to-use condition.
The steel was confirmed by Sukenari as a honyaki blade in Shirogami No.1, and the hand-carved chisel mark indicates this is a considerably old piece. It is suitable for professionals and home cooks alike.
