Yanagiba sashimi knife crafted by Kaneyoshi, made in Japan. The blade is a laminated (kasumi/awase) construction, combining Shirogami No.3 (white paper) high-carbon steel with soft iron, giving a sharp edge that is easy to sharpen and resistant to chipping. This construction makes it ideal for cleanly slicing sashimi and for filleting fish with fine bones or slender bodies.
The handle is made of magnolia (ho) wood, which is soft and fits comfortably in the hand, while the ferrule is buffalo horn, which tightens as it absorbs water. As a carbon-steel Japanese knife, wiping off moisture and drying it thoroughly helps prevent rust.
