Japanese deba knife crafted by Kaneyoshi. The blade uses laminated construction (Shirogami No.3 blade steel bonded to soft iron), with the cutting steel forged from Hitachi Yasuki steel and finished by skilled artisans for a sharp edge. This blade construction joins two different materials, making the knife easy to sharpen and resistant to chipping. Ideal for scaling fish, splitting along the back, and processing bones.
The handle is made of ho (magnolia) wood, a soft material that fits comfortably in the hand and is easy to replace over time. The ferrule (kuchigane) is buffalo horn, which tightens when it absorbs water. As with all Japanese carbon-steel knives, wiping off moisture and drying thoroughly is the first step in preventing rust.
